In this video I’m showing you how to make Champagne cupcakes. They are keto friendly, gluten free and without any added sugar.

Ingredients:
Cupcake:
100g Sweetener
90g Butter, softened
2 Eggs
1 tsp Vanilla Extract
90g Almond Flour
30g Coconut Flour
1 tsp Baking Powder
¼ tsp Salt
100g Champagne
Frosting:
250g Powdered Sweetener
60g Butter, softened
4 tbsp Champagne
Garnish:
Shredded Coconut
In a bowl add sweetener and butter
Mix with an electric mixer until creamy
Add eggs and vanilla extract
Continue mixing with the electric mixer until combined
In another bowl add almond flour, coconut flour, baking powder, and salt
Mix with a spatula until combined
Add he flour mix to the egg mix
Mix with a spatula until combined
Add champagne and mix until combined
Fill up 2/3 of cupcake molds with the mix
Bake in the oven on 175°C|350°F for 20 min
Let cool off completely
Continue with the frosting. In a bowl add powdered sweetener, butter and champagne
Mix with an electric mixer until creamy
Put the frosting in a piping bag
Pipe on the frosting onto the cupcake
Sprinkle over shredded coconut
