Keto Red Velvet Poke Bites

In this video I’m showing you how to make Red velvet poke bites. They are keto friendly, gluten free and without any added sugar.

Ingredients:

Cake:

150g Sweetener

50g Almond Flour

25g Coconut Flour

1 tsp Cocoa Powder

½ tsp Baking Soda

¼ tsp Salt

120g Milk

110g Butter, melted

2 Eggs

½ tsp Lemon Juice

½ tsp Vanilla Extract

Red Food Coloring

 

Filling:

70g Dark Chocolate, sugar free, melted

60g Cream Cheese

Frosting:

125g Heavy Cream

30g Powdered Sweetener

½ tsp Vanilla Extract

Green Food Coloring

 

Garnish:

Shredded Dark Chocolate, sugar free

 

 

⭐️ In a bowl add sweetener, almond flour, coconut flour, cocoa powder, baking soda, and salt

 

⭐️ Mix with a spatula until combined

 

⭐️ In another bowl add milk, butter, eggs, lemon juice, and vanilla extract 

 

⭐️ Mix with an electric mixer until combined

 

⭐️ Add the flour mix to the egg mix

 

⭐️ Mix with a spatula until combined

 

⭐️ Add red food coloring

 

⭐️ Mix with a spatula until the color is even

 

⭐️ Add the mix to an oven pan, that is covered in parchment paper

 

⭐️ Bake in the oven on 175°C|350°F for 30 min

 

⭐️ Let cool off completely 

 

⭐️ Continue with the filling. In a bowl add dark chocolate and cream cheese

 

⭐️ Mix with a spatula until combined

 

⭐️ Poke holes in the cake

 

⭐️ Add the filling and spread out evenly

 

⭐️ Continue with the frosting. In a bowl add heavy cream, powdered sweetener, and vanilla extract

 

⭐️ Mix with an electric mixer until stiff peaks

 

⭐️ Add green food coloring

 

⭐️ Mix with a spatula until the color is even

 

⭐️ Pipe the frosting onto the cake

 

⭐️ Sprinkle over shredded dark chocolate

 

⭐️ Cut into pieces
