In this video I’m showing you how to make a Cranberry Cake. It is keto friendly, gluten free and without any added sugar.
This is perfect for the coffee snack or dessert during thanksgiving season.

Ingredients:
Cake:
100g Sweetener
60g Almond Flour
½ tsp Baking Powder
85g Butter, melted
60g Cream Cheese
60g Milk
1 Egg
1.5 tsp Vanilla Extract
75g Cranberries
Frosting:
40g White Chocolate, Sugar free
20g Heavy Cream, hot!
20g Butter, softened
125g Powdered Sweetener
Green Food Coloring
Garnish:
Cranberries
Powdered Sweetener
Start with the cake. In a bowl add sweetener, almond flour and baking powder and mix until combined
In another bowl add melted butter, cream cheese, milk, egg and vanilla extract and mix with an electric mixer until combined
Add the dry ingredients and mix with a spatula until smooth
Add cranberries and mix until combined
Pour mix into an oven pan and spread out evenly
Bake in the oven on 175°C|350°F for 30 min
Let cool off completely
Continue making the frosting. In a bowl add white chocolate and hot heavy cream and mix with a spatula until smooth
Add butter and continue mixing until smooth
Add powdered sweetener and continue mixing until smooth
Add green food coloring and mix until the color is even
Pipe the frosting onto the cake
Add cranberries
Sift on powdered sweetener
Cut into pieces
Enjoy!
