Ingredients:
Cake:
135g Sweetener
2 Eggs
80g Almond Flour
40g Coconut Flour
1 tsp Baking Powder
100g Butter, melted
50g Heavy Cream
1.5 tsp Vanilla Extract
Tosca Topping:
75g Butter
70g Syrup, sugar free
45g Sweetener
20g Heavy Cream
10g Almond Flour
250g Mixed Nuts, cut into small pieces
Start with the cake. In a bowl add sweetener and eggs and mix with an electric mixer until fluffy
In another bowl add almond flour, coconut flour and baking powder and mix until combined with a spatula
Add the flour mix to the egg mix, add butter, heavy cream and vanilla extract and continue mixing with the spatula until combined
Pour the mix into an oven pan covered with parchment paper
Bake in the oven on 175°C|350°F for 30 min and let cool off after
While the cake is baking make the tosca topping. In a pan add butter, syrup, sweetener, heavy cream and almond flour
Put on the stove on medium heat and let boil for 5 min while stirring with a spatula from time to time
Take the pan off the heat and add the nuts. Mix until combined with a spatula
Pour the tosca topping over the cake and spread our evenly
Bake in the oven on 175°C|350°F for 15 min and let cool off after
Cut into pieces
