In this video I’m showing you how to make Mini Semlor. They are also keto friendly.
These are perfect for the coffee snack or dessert. It is a Swedish tradition that is eaten on the Fat Tuesday. This year that is on the 1st of March.

Ingredients:
Bun:
2 Eggs
45g Sweetener
60g Almond Flour
1.5 tbsp Coconut Flour
1.25 tbsp Psyllium Husk
¾ tsp Baking Powder
¾ tsp Cardamom
¼ tsp Salt
60g Heavy Cream
½ tsp Vanilla Extract
Filling 1:
60g Almond Mass, sugar free, grated
20g Milk
Filling 2:
140g Heavy Cream
Garnish:
Powdered Sweetener
Start with the buns. In a bowl add eggs and sweetener and mix with an electric mixer until combined
In another bowl add almond flour, coconut flour, psyllium husk, baking powder, cardamom and salt and mix until combined
Add the dry ingredients to the wet and add heavy cream and vanilla extract and mix until a dough form
Let rest for 10 min
Shape the buns and put them on an oven pan with parchment paper
Brush with a whisked egg
Bake in the oven on 160°C|320°F for 20 min and let cool off after
In a bowl add almond mass and milk and mix until combined
Put into a piping bag
In a bowl add heavy cream and whisk until stiff peaks
Put into a piping bag
Cut the top off the bun
Pipe on the almond mix
Pipe on the heavy cream
Place the top of the bun on the heavy cream
Sift over powdered sweetener
Enjoy!
