Ingredients:
Cupcake:
4 Eggs
240g Greek Yogurt
60g Butter
2 tsp Vanilla Extract
100g Almond Flour
100g Erythritol
4 tbsp Coconut Flour
2 tsp Baking Powder
½ tsp Salt
¼ tsp Red Food Coloring Paste
Frosting:
220g Cream Cheese
120g Powdered Erythritol
100g Butter
2 tbsp Milk
1 tsp Vanilla Extract
Icing:
30g Powdered Erythritol
2 tsp Water
1 pinch Red Food Coloring Paste
Start with the cupcake batter. Mix eggs, Greek yogurt, butter and vanilla extract with a whisk until smooth
In another bowl add almond flour, erythritol, coconut flour, baking powder and salt and mix with a spatula
Combine the dry mix with the wet one. Mix with a spatula until smooth
Add red food coloring paste and mix until the color is even
In a new bowl add cream cheese, erythritol, egg and vanilla extract and mix until smooth
Add the food coloring and continue mixing until it has an even color
Add two tbsp mix into cupcake molds
Bake in the oven on 160°C|320°F for 30 min and let cool off completely
Move on to the frosting. In a bowl add cream cheese, powdered erythritol, butter, milk and vanilla extract and mix with an electric mixer until combined
Put into a piping bag and save for later
Move on to the icing. In a new bowl add powdered erythritol and water and mix with a spatula until smooth
Add red food coloring paste and mix until the color is even
Put into a piping bag and save for later
Pipe the frosting onto the cupcakes
Drip on the icing
