Stuffed Pancakes

Ingredients:

Pancake:

2 Eggs

55g Cream Cheese

2 tbsp Almond Flour

1 tbsp Erythritol

½ tsp Cinnamon

½ tsp Vanilla Extract

1 pinch Salt

Non-Stick Spray

 

Filling:

50g Hazelnut Spread, sugar free

50g Raspberry

50g Blueberry

50g Whipped Cream

 

Garnish (optional):

Syrup, sugar free (I used Sukrin Gold)

Powdered Erythritol

 

⭐️ Add all pancake ingredients to a bowl and mix until smooth

 

⭐️ Heat up a pan on medium heat and spray in non-stick spray

 

⭐️ Add about 1 dl of the pancake batter and fry until stiff

 

⭐️ Flip and let fry for another 1-2 minutes 

 

⭐️ Place 1 pancake on a cutting board and make a cut

 

⭐️ Add the hazelnut spread to a quarter of the pancake, do the same with the raspberries, blueberries and the whipped cream

 

⭐️ Fold

 

⭐️ Sprinkle the syrup and powdered erythritol on top

 

⭐️ Enjoy!
