Swedish Semla

Hey!

In this video I’m showing you how to make Swedish Semlor. Last Tuesday was Fat Tuesday in Sweden and since I’m not living there anymore, I just had to make my own Semlor that Swedes eat on that day. They are one of my favorite pastries

Makes around 16 pieces

Ingredients:

25g Yeast

2 dl Milk

7 dl flour

2 Eggs

½ tsp Salt

1 tbsp Cardamom

1 dl Sugar

100 g Butter

2 dl Heavy Cream

1 tbsp Nutella

80g Almond mass

Icing sugar for decoration

 

 

⭐️ Add yeast to a bowl and add room temperature milk

 

 

⭐️ Add 4 dl flour and mix

 

 

⭐️ Let rest for 15 min

 

⭐️ Add 1 egg, salt, cardamom, sugar and butter and mix 

 

⭐️Work the dough for 10 min and add more flour if needed

 

⭐️Let rest for 30 min

 

⭐️ Weigh up the dough to 60g per bun

 

⭐️ Roll them into balls

 

⭐️ Put on an oven plate with parchment paper and let rest for 2 hours

 

⭐️ Brush the buns with egg

 

⭐️ Bake in the oven on 210°C|410°F for 10 min and let cool off

 

⭐️Mix the heavy cream in a bowl

 

⭐️ Split the cream into two bowls

 

⭐️ Add the Nutella to one bowl and mix

 

⭐️Put the cream into piping bags

 

⭐️ Cut off the top of the buns with a scissor

 

⭐️Add 5g of almond mass to each bun

 

⭐️ Pipe on the whipped cream 

 

⭐️ Put back the top of the bun

 

⭐️ Add icing sugar

 

⭐️ Enjoy!
