Keto Cranberry Cake

In this video I’m showing you how to make a Cranberry Cake. It is keto friendly, gluten free and without any added sugar.

This is perfect for the coffee snack or dessert during thanksgiving season.

Ingredients:

Cake:

100g Sweetener

60g Almond Flour

½ tsp Baking Powder

85g Butter, melted

60g Cream Cheese

60g Milk

1 Egg

1.5 tsp Vanilla Extract

75g Cranberries

 

Frosting:

40g White Chocolate, Sugar free

20g Heavy Cream, hot!

20g Butter, softened

125g Powdered Sweetener

Green Food Coloring

 

Garnish:

Cranberries

Powdered Sweetener

 

⭐️ Start with the cake. In a bowl add sweetener, almond flour and baking powder and mix until combined

 

⭐️ In another bowl add melted butter, cream cheese, milk, egg and vanilla extract and mix with an electric mixer until combined

 

⭐️ Add the dry ingredients and mix with a spatula until smooth

 

⭐️ Add cranberries and mix until combined 

 

⭐️ Pour mix into an oven pan and spread out evenly

 

⭐️ Bake in the oven on 175°C|350°F for 30 min

 

⭐️ Let cool off completely 

 

⭐️ Continue making the frosting. In a bowl add white chocolate and hot heavy cream and mix with a spatula until smooth

 

⭐️ Add butter and continue mixing until smooth

 

⭐️ Add powdered sweetener and continue mixing until smooth

 

⭐️ Add green food coloring and mix until the color is even

 

⭐️ Pipe the frosting onto the cake 

 

⭐️ Add cranberries

 

⭐️ Sift on powdered sweetener

 

⭐️ Cut into pieces

 

⭐️ Enjoy!
