In this video I’m showing you how to make a Caramel Cake Bites with Chocolate Frosting. It is keto friendly, gluten free and without any added sugar.

Ingredients:
Cake:
60g Butter, softened
60g Sweetener
1 Egg
30g Almond Flour
10g Coconut Flour
½ tsp Baking Powder
¼ tsp Salt
90g Cream Cheese
½ tbsp Lemon Juice
¾ tsp Vanilla Extract
Caramel Layer:
60g Butter
55g Brown Sweetener
30g Heavy Cream
60g Powdered Sweetener
¾ tsp Vanilla Extract
Chocolate Frosting:
70g Chocolate, sugar free, melted
60g Cream Cheese
Start with the cake. In a bowl add butter and sweetener and mix with an electric mixer until creamy
Drag down the batter from the edges with a spatula
Add the egg and continue mixing with the electric mixer until combined
In another bowl add almond flour, coconut flour and baking powder and salt and mix with a spatula until combined
Add the flour mix to the first bowl and add cream cheese, lemon juice and vanilla extract and mix with a spatula until
combined
Add to av oven pan and spread out evenly
Bake in the oven on 175°C|350°F for 30 min
Let cool off
Continue on with the caramel layer. In a pan add butter, brown sweetener and heavy cream
Put the pan on the stove and let the mix boil for 3 min. Stir a little from time to time
Pour the caramel mix into a bowl
Add powdered sweetener and mix until combined
Pour the caramel over the cake and spread out evenly with a spatula
Refrigerate for 1 hour
Continue with making the frosting when there is a few minutes left for the cake in the fridge. In a bowl add melted
chocolate and cream cheese and mix with a spatula until combined
Add the frosting into a piping bag
Pipe on the frosting on the cake
Cut into pieces
