Keto Summer Cake

In this video I’m showing you how to make a Summer Cake. It’s keto friendly, gluten free and without any added sugar.

Ingredients:

Cake:

75g Sweetener

30g Butter, softened

60g Cream Cheese

1 Egg

½ tsp Vanilla Extract

85g Almond Flour

½ tsp Baking Powder

¼ tsp Salt

 

Topping:

150g Heavy Cream

50g Strawberries, sliced

 

⭐️ In a bowl add sweetener and butter and mix with an electric mixer until creamy

 

⭐️ Add cream cheese, egg and vanilla extract and mix with a spatula until combined

 

⭐️ In another bowl add almond flour, baking powder and salt and mix with a spatula until combined

 

⭐️ Pour the flour mix into the wet mix and mix with a spatula until combined

 

⭐️ Add the mix to an oven pan and spread out evenly

 

⭐️ Bake in the oven on 175°C|350°F for 15 min

 

⭐️ Let cool off

 

⭐️ Add heavy cream to a bowl and mix with an electric mixer until soft peaks

 

⭐️ Add 2 tbsp of heavy cream to the cake and spread out evenly with a spatula

 

⭐️ Add strawberries

 

⭐️ Pipe on the rest of the heavy cream

 

⭐️ Cut into pieces

 

⭐️ Enjoy!
