Keto Blueberry Cookies

In this video I’m showing you how to make super easy and tasty blueberry cookies. This is also keto friendly, gluten free and without any added sugar.

This is perfect for the coffee snack or dessert.

Ingredients:

Blueberry mix:

75g Blueberries

45g Sweetener

½ tbsp Water

 

Cookie:

50g Butter

45g Sweetener

20g Syrup, sugar free

1 tsp Vanilla Extract

75g Almond Flour

½ tbsp Psyllium Husk

½ tsp Cardamom

½ tsp Baking Powder

 

⭐️ Start with the blueberry mix. In a pan add blueberries, sweetener and water

 

⭐️ Put on the stove on medium heat and let boil for 5 min

 

⭐️ Pour the mix through a strainer to remove the fluid and pour the blueberries back into the pan and set aside

 

⭐️ Continue with the cookie. In a bowl add butter, sweetener, syrup and vanilla extract and mix with an electric mixer until creamy

 

⭐️ In another bowl add almond flour, psyllium husk, cardamom and baking powder and mix until combined

 

⭐️ Pour flour mix into the butter mix and mix until combined

 

⭐️ Roll out and press down the middle to make room for the blueberries

 

⭐️ Add the blueberries to the middle of the cookie dough

 

⭐️ Bake in the oven on 175°C|350°F for 15 min

 

⭐️ Let cool off

 

⭐️ Cut into pieces

 

⭐️ Enjoy!
