Keto Easter Poke Cake

Ingredients:

Cake:

100g Sweeter

90g Butter

2 Eggs

60g Milk

1 tsp Vanilla Extract

90g Almond Flour

30g Coconut Flour

1 tsp Baking Powder

¼ tsp Salt

Purple Food Coloring

Red Food Coloring

Green Food Coloring

Yellow Food Coloring

 

Vanilla Sauce:

60g Milk

30g Coconut Oil, melted

3 Egg Yolks

½ tsp Sweetener

½ tsp Vanilla Extract

 

Frosting:

55g Butter

45g Powdered Sweetener

40g White Chocolate, melted, sugar free

½ tsp Vanilla Extract

 

⭐️ Start with the cake.  In a bowl add sweetener and butter and mix with an electric mixer until creamy

 

⭐️ Add eggs and continue mixing until combined

 

⭐️ Add mild and vanilla extract and continue mixing until combined

 

⭐️ In another bowl add almond flour, coconut flour, baking powder and salt and mix until combined

 

⭐️ Add the dry ingredients to the wet and mix until combined with a spatula 

 

⭐️ Split the batter into 4 bowls

 

⭐️ Add food coloring to the bowls. 1 color per bowl.  Mix the colors until combined

 

⭐️ In an oven pan add the batter a little bit of each color at the time until all bowls are empty

 

⭐️ Smooth out with a spatula

 

⭐️ Bake in the oven on 180°C|355°F for 20 min and let cool off after

 

⭐️ Make the vanilla sauce. In a heat safe bowl add milk, coconut oil, egg yolks, sweetener and vanilla extract and mix with a whisk until combined

 

⭐️ Put the bowl in a water bath on the stove and bring up to 60°C|140°F while whisking

 

⭐️ Take the bowl off the stove and continue mixing for 3 minutes

 

⭐️ Put into a piping bag

 

⭐️ Use the end of a whisk and make small holes in the cake

 

⭐️ Fill the holes up with vanilla sauce and pipe the remaining sauce on top of the cake

 

⭐️ Refrigerate for 1 hour

 

⭐️ Make the frosting. In a bowl add butter, powdered sweetener and whisk with an electric mixer until creamy

 

⭐️ Add white chocolate and vanilla extract and continue mixing with a spatula until smooth

 

⭐️ Add the frosting to the cake and spread it out evenly

 

⭐️Cut into pieces

 

⭐️ Enjoy!
