Keto Valentine Caramel Cupcakes

In this video I’m showing you how to make Valentine Caramel Cupcakes.  It is also keto friendly.

These are perfect for the coffee snack or dessert or for a valentine’s gift.

Carbs: 3g (1g net)

Ingredients:

Cupcake:

75g Almond Flour

75g Sweetener

3 tbsp Coconut Flour

1,5 tsp Baking Powder

¼ tsp Salt

180g Crème Fraiche

2 Eggs

45g Butter

¾ tsp Vanilla Extract

¾ tsp Caramel Extract

 

Frosting:

170g Heavy Cream

50g Powdered Sweetener

½ tsp Caramel Extract

Red Food Coloring

 

Garnish:

Dark Chocolate, sugar free

 

⭐️ In a bowl add almond flour, sweetener, coconut flour, baking powder and salt and mix with a spatula until combined

 

⭐️ In another bowl add crème fraiche, eggs, butter, vanilla extract and caramel extract and mix with a whisk until combined

 

⭐️ Add wet ingredients to the dry and mix until combined with a spatula

 

⭐️ Add 2 tbsp of the batter to cupcake molds

 

⭐️ Bake in the oven on 180°C|355°F for 25 min and let cool off after

 

⭐️ Make the frosting. In a bowl add heavy cream and mix with an electric mix until soft peaks

 

⭐️ Add powdered sweetener and desired food coloring and mix with a spatula until combined, pour into a piping bag

 

⭐️ Pipe on the frosting

 

⭐️ Grate dark chocolate over  

 

⭐️ Enjoy!
