Ingredients:
Crumble:
125g Butter, softened
100g Almond Flour
90g Sweetener
50g Coconut Flour
1 tsp Baking Powder
Filling:
225g Crème Fraiche
65g Sweetener
1 Egg
1 tbsp Lemon Zest
1.5 tsp Vanilla Extract
75g Berries
Garnish:
Powdered Sweetener
Start making the crumble. In a bowl add butter, almond flour, sweetener, coconut flour and baking powder and mix with a fork until it becomes a crumble
Add half of the crumble to an oven pan with parchment paper
Use a cup (or something similar) to push the crumble into the bottom of the pan evenly
Set the other half of the crumble aside for later
Make the filling. In another bowl add crème fraiche, sweetener, egg, lemon zest and vanilla extract and whisk together until smooth
Pour the filling into the oven pan
Add the berries and spread them out evenly
Sprinkle over the rest of the crumble
Bake in the oven on 200°C|390°F for 30 min
Let cool off completely
Cut into pieces
Sprinkle over powdered sweetener
Enjoy!
