Keto Berry Vanilla Crumble

In this video I’m showing you how to make berry vanilla crumble bites.  It is also keto friendly.

Makes around 12 servings

Nutrition per serving:

Calories: 184

Carbs: 3.7g (1.3 net)

Protein: 3.9g

Fat: 17.5g

 

Ingredients:

Crumble:

125g Butter, softened

100g Almond Flour

90g Sweetener

50g Coconut Flour

1 tsp Baking Powder

 

Filling:

225g Crème Fraiche

65g Sweetener

1 Egg

1 tbsp Lemon Zest

1.5 tsp Vanilla Extract

75g Berries

 

Garnish:

Powdered Sweetener

 

⭐️ Start making the crumble. In a bowl add butter, almond flour, sweetener, coconut flour and baking powder and mix with a fork until it becomes a crumble

 

⭐️ Add half of the crumble to an oven pan with parchment paper

 

⭐️ Use a cup (or something similar) to push the crumble into the bottom of the pan evenly

 

⭐️ Set the other half of the crumble aside for later

 

⭐️ Make the filling. In another bowl add crème fraiche, sweetener, egg, lemon zest and vanilla extract and whisk together until smooth

 

⭐️ Pour the filling into the oven pan

 

⭐️ Add the berries and spread them out evenly

 

⭐️ Sprinkle over the rest of the crumble

 

⭐️ Bake in the oven on 200°C|390°F for 30 min

 

⭐️ Let cool off completely

 

⭐️ Cut into pieces

 

⭐️ Sprinkle over powdered sweetener

 

⭐️ Enjoy!
