Ingredients:
Pancake:
2 Eggs
55g Cream Cheese
2 tbsp Almond Flour
1 tbsp Erythritol
½ tsp Cinnamon
½ tsp Vanilla Extract
1 pinch Salt
Non-Stick Spray
Filling:
50g Hazelnut Spread, sugar free
50g Raspberry
50g Blueberry
50g Whipped Cream
Garnish (optional):
Syrup, sugar free (I used Sukrin Gold)
Powdered Erythritol
Add all pancake ingredients to a bowl and mix until smooth
Heat up a pan on medium heat and spray in non-stick spray
Add about 1 dl of the pancake batter and fry until stiff
Flip and let fry for another 1-2 minutes
Place 1 pancake on a cutting board and make a cut
Add the hazelnut spread to a quarter of the pancake, do the same with the raspberries, blueberries and the whipped cream
Fold
Sprinkle the syrup and powdered erythritol on top
