In this video I’m showing you how to make Swedish Semlor. Last Tuesday was Fat Tuesday in Sweden and since I’m not living there anymore, I just had to make my own Semlor that Swedes eat on that day. They are one of my favorite pastries

Makes around 16 pieces
Ingredients:
25g Yeast
2 dl Milk
7 dl flour
2 Eggs
½ tsp Salt
1 tbsp Cardamom
1 dl Sugar
100 g Butter
2 dl Heavy Cream
1 tbsp Nutella
80g Almond mass
Icing sugar for decoration
Add yeast to a bowl and add room temperature milk
Add 4 dl flour and mix
Let rest for 15 min
Add 1 egg, salt, cardamom, sugar and butter and mix
Work the dough for 10 min and add more flour if needed
Let rest for 30 min
Weigh up the dough to 60g per bun
Roll them into balls
Put on an oven plate with parchment paper and let rest for 2 hours
Brush the buns with egg
Bake in the oven on 210°C|410°F for 10 min and let cool off
Mix the heavy cream in a bowl
Split the cream into two bowls
Add the Nutella to one bowl and mix
Put the cream into piping bags
Cut off the top of the buns with a scissor
Add 5g of almond mass to each bun
Pipe on the whipped cream
Put back the top of the bun
Add icing sugar
